This is the one for kitchens that go through cinnamon quickly, for bulk baking, and for recipes where the spice is one strong note among several rather than the delicate centre of the dish.
It is still Cinnamomum verum and still nothing but cinnamon. Only the grade of the quill going into the mill changes.
